Thank you for supporting the brands that support Well and Full!
Can we just address something right away? Apparently the FDA has ruled that you can’t put “love” as an ingredient on food. When I saw that, I was like…. Okay, okay, I GET that love is not a real, tangible ingredient. And that you have to draw the line somewhere; you wouldn’t put, like, “magical unicorn dust” on a food label either. But come on! WHAT HAPPENED TO OUR SENSE OF WHIMSY?! Marketing technique or not, it’s a nice sentiment. But, to be fair, rules are rules, and maybe we can just relegate “Made With Love” to a separate area of the packaging. Cool? Cool.
So now that that‘s out of the way, let me be real for a second – this post is going to be about vegan loaded fries, and really cool watches. But there’s not really a way to go from one to the other, unless you were hoping for some lame segue about how “time flies when you’re having fun in the kitchen!!!”
You know, a lot of bloggers do sponsored posts and ads (myself included), but I rarely hear anyone talk about what it’s all about, and what it really “means” for us.
Most of the time, we food bloggers promote, well, food (but not anything with love as an ingredient because THE HORROR!!). But sometimes we get to talk about other types of products, like these wood watches, that align with our brand. I really love the watch I’m wearing in these photos because it’s made from natural “ingredients”, so to speak – namely, natural zebrawood. Which is a great fit for a food blog that works with natural ingredients as well. (Okay, so maybe there was a lame segue in there after all.)
But seriously, when a brand comes along that supports your work and your vision, it’s kind of like a friend saying, “Hey – I notice the hard work that you do. Let me help you continue to do it!” So I really want to thank Jord Wood Watches for supporting me and this blog!!
But if you’re interested in WINNING $100 towards a watch, you can also fill out this quick little survey here! (And even if you don’t win, you’ll still get $25 towards a watch!)
The contest closes on 10/22. Good luck!!
Ultimate Vegan Loaded Fries
These are the ultimate vegan loaded fries, made with russet potatoes, chickpeas, and a spicy sriracha tahini sauce! Deliciously Gluten Free.Prep Time 15 minutes Cook Time 30 minutes Total Time 45 minutes Servings 2
- 3 Medium Russet Potatoes
- 3 Tbs Extra Virgin Olive Oil
- 1/2 Tsp Salt
- 1 Tsp Garlic Powder
- 1 Tsp Dried Parsley
- Lots of Fresh Cracked Black Pepper to taste
Sriracha Tahini Sauce
- 1/3 Cup Tahini
- 1/4 Cup Water to thin
- 1 Tbs Sriracha
- 2 Tbs Tamari or soy sauce
- Juice from 1/2 a Lemon
- 1 Tsp Paprika
- 1 Clove Garlic minced
- 1 1/2 Cups Cooked Chickpeas or one 15 oz can
- Chopped Fresh Parsley to taste
- Sriracha to taste
- Fresh Cracked Black Pepper to taste
- Any other toppings your heart desires!
Preheat the oven to 450 degrees F.
Cut the russet potatoes into thin-ish strips, about 1/4-1/3 inch in width. (See photos for reference).
In a bowl, toss fries with the olive oil and spices. Add in as much black pepper as you like.
On two baking sheets lined with parchment paper, set out your fries, trying to make sure they don't touch (they'll get crispier this way!)
Bake fries in the oven for 20-30 minutes, tossing halfway. Towards the end of the cooking time, be sure to check on your fries more often to make sure they don't burn.
When done, set aside to cool.
Sriracha Tahini Sauce
To start, mince the garlic (I find mincing the garlic first helps with most blenders). Then, add all other ingredients into the blender and blend until everything is smooth.
When done, add more water to thin if necessary. The thinner the sauce, the more drizzle-able it becomes!
Putting It All Together
Split up the fries evenly into two bowls (or one bowl if you're really hungry!).
Drizzle the fries with the sriracha tahini, and load on the chickpeas and dried parsley, and any other toppings you like. Be sure to add extra sriracha if you like it spicy, and more fresh cracked black pepper.
